Our Founder's Journey
Siti Mardhiyah discovered the transformative power of gluten-free cooking after witnessing friends and family struggle with digestive challenges while maintaining traditional Indonesian culinary traditions. Rather than accepting bland alternatives, she dedicated herself to mastering techniques that preserve authentic flavors while accommodating dietary needs.
After completing advanced culinary training in Singapore and studying food science principles at regional institutions, Siti realized that most gluten-free education focused on restriction rather than innovation. In 2020, she launched Holistic Chef Academy to fill this gap—creating a space where technique meets compassion, and where gluten-free cooking is celebrated as a sophisticated culinary discipline.
Today, the Academy has taught hundreds of students across Indonesia, from professional chefs to home cooks, each discovering that gluten-free cooking opens doors rather than closes them.

Siti is a professionally trained chef with 12 years of culinary experience across Southeast Asia. She specializes in gluten-free baking, Indonesian cuisine adaptation, and food science education. Her teaching approach combines technical precision with cultural sensitivity, ensuring students honor traditional recipes while making them inclusive.
Bambang Wijaya
Baking Specialist
Bambang brings 8 years of professional baking experience from Jakarta's top pastry shops and five-star hotels. He specializes in gluten-free bread formulation, fermentation science, and flour alternative technology. His hands-on demonstrations make complex baking chemistry accessible to students of all skill levels.
Dewi Kusuma
Culinary Scientist
Dewi holds a degree in food science and brings laboratory-tested knowledge to every classroom session. Ahmad brings 10 years of executive chef experience in Surabaya's finest restaurants.
